If your kids are anything like mine, they frequently beg for bananas at the grocery store only to let the last one or two of the bunch go soft and brown. What is it about kids that they are terrified of bananas that have even the barest hint of brown spots? And if your kids are anything like 2% of children who are allergic to eggs and dairy, then you’re probably always on the lookout for vegan recipes that are just as good as the “real thing”. Should it happen that your kids fall into both camps – those fearful of browning bananas and those who have to stay clear of dairy, eggs, or both – then you’re in luck.
I happen to have an amazing vegan brownie recipe that is the perfect way to make that sad brown magically banana disappear!
Vegan Banana Brownies
- 2 c. all-purpose flour
- 1 and 3/4 c. sugar
- 3/4 c. unsweetened cocoa powder
- 1 tsp. baking powder
- 1 tsp. salt
- 1 c. mashed ripe bananas
- 1/4 c. soy milk or almond milk
- 1/4 c. vegetable oil
- 1 tsp. vanilla extract
- 1 c. dairy-free chocolate chips

We like to serve these vegan brownies warm with a big scoop of coconut milk ice cream on top.
Seriously, if you’ve never tried a vegan baking recipe before this is a good place to start. These brownies come out fudgey and especially moist thanks to the banana, which imparts a not-too-strong banana flavor but is definitely there for anyone looking for it. But mild enough that finicky eaters like my daughter won’t notice it. And speaking of that banana, this is also a fun recipe for little hands to help with because what toddler doesn’t want to go to town on one of those scary brown bananas? A potato masher and some pent-up toddler energy definitely come in handy here
