Jenny Ford’s Must-Try Peanut Butter Honey Popcorn Recipe

I tested out this healthy Peanut Butter Honey Popcorn recipe on my boys after school today. Result? They loved it! (In other words, they weren’t hungry again until dinner.) It’s so easy to make, pretty filling, and will satisfy any peanut butter lover. With summer break right around the corner I like to have a few healthier snacking options around for my boys, their friends, and me!

Here’s what you’ll need:

  • 2/3 cup unpopped popcorn
  • 1/3 cup creamy peanut butter (can use natural)
  • 1/4 cup honey
  • 1 tbsp. granulated sugar (can omit)
  • 1 tsp. vanilla
  • 1/2 tsp. sea salt

Pop the popcorn in an air popper, or you can place kernels in a paper bag folded over in the microwave. Make sure to remove all unpopped kernels so you don’t break a tooth. Place popped popcorn in a large mixing bowl.

Prepare a cookie sheet covered with wax or parchment paper.

In a small saucepan heat up the honey and sugar. Stir and dissolve sugar with honey for about 2 minutes. Pull off stove and mix in peanut butter and vanilla until smooth. Immediately pour over popcorn and stir until each piece is well coated. Spread on cookie sheet to cool. Serve in bowls as it’s a little sticky. Best when eaten the same day.
